I would say it depends on multiple aspects here. Personally, I love using Hitman or Blofeld. Shadow is pretty amazing as well, but I like to make it difficult for myself.
I'm not too fond of Huli/Muli. Probably because I hate bananas.. lol
I'm not fond of the Scarecrow, due to how I am always mashing the next wave button.
1-1000 waves: Hitman, Shadow, Blofeld
500-1000 waves: Shadow or Blofeld
1000-2000 waves: Shadow (or Blofeld w/ 14 Gib's)
Tough choice though, because I love using them all.
